Pre-heat your oven to 355 - 375 degrees F.
In terms of seasoning your lamb, if it is a quality piece, it will have good that you don't want to overpower with loads of seasonings. The following instructions bring out the wonderful natural flavors with a couple of simple added ingredients.
Make about 10 1 - 2" deep pockets in both sides of the meat (the sized pockets you need are achieved by using a small paring knife and simply making a small opening by lowering the knife into the meat so as to make about at 1/2 inch slit). Into each pocket place 1/2 a large clove or 1 small clove of garlic.
Place the lamb in a large roasting pan and pour water into the pan so as the bottom two inches of the meat is submersed. Put the lamb into the oven and cook for approx. 2.0 hours at your pre-heated temperature. Replenish the water as need be. At the two-hour mark, take the lamb out of the oven and smear about 2 Tablespoons of strawberry of raspberry jam over topside. Put back in the oven and cook for an additional 20-30 minutes.
The effect of this way of cooking will give you a delicious result. The jam acts as a subtle flavor enhancer but also a tenderizer as the acids from the fruit permeate the meat fiber’s and break them down a little to ensure a beautifully tender dinner!
As a footnote, the cooking time per pound of de-frosted lamb should be approx. 30 - 35 minutes for medium and 40 -45 minutes for well done.
